Maundy Thurday, Bread & Butter Pudding!

I can’t apologise enough that I haven’t been able to get blogposts up for the last couple of weeks, I’ve been really poorly leaving me bed bound so I haven’t had a chance to write much during that time but I’m back today and for the next three days also bring you some Easter baking. 

If you didn’t know already, today is Maundy Thursday. What is Maundy Thursday you ask? Maunday Thursday also know as Holy Thursday is a special day within the Christian religion. It’s the night before Jesus’ death, Jesus had a final meal with his disciples of Chris. Before this festival meal for Passover, Jesus surprised his disciples by washing the feet of every person, as he wanted to show his followers that they should love one another in humble ways. Later in the meal, which is known to Christians as ‘The Last Supper’, Jesus passed round bread and wine. He said the bread was his body broken for them and the wine was his blood shed for them. He was telling them that he was going to die and that when they share bread and wine they should remember him. Christians share bread and wine at their church services all year round, but it is even more special on Maundy Thursday.  – I hope this helped you understand a little bit of background on Maundy Thursday. 

So today I’ve decided to bake and share with you my Bread & Butter Pudding recipe; 

Ingredients To Make Bread & Butter Pudding:

  • 150g of butter, melted 
  • 10 slices white bread
  • 1 teaspoon of ground cinnamon 
  • 1 teaspoon of ground nutmeg 
  • 300mls of full-fat milk
  • 100mls of double cream
  • 2 eggs 
  • 100g of golden caster sugar

How To Make Bread & Butter Pudding:

  • Firstly, gather together all the ingredients, equipment and grease a pie.
  • Secondly, remove the crust from the bread (this is optional, I didn’t actually do this step, I left the crusts on as it adds some extra texture) and cut each piece of bread into four triangles.
  • Next, put a layer of bread in the bottom of the dish, then in the microwave melt 50g of butter for 30 seconds. Once done brush the melted butter over the layer of bread. Sprinkle a teaspoon of cinnamon and nutmeg over the top. 
  • Then, repeat this process. Keep going until you have three layers of bread. 
  • In a pan, warm the milk and cream together, BUT don’t let it boil. 
  • Whisk the eggs and sugar together until light and pale, then slowly pour this into the cream mixture stirring constantly, until fully combined. 
  • Now, pour the custard over the bread slices. At this point, turn on the oven to 180oC / 350oF / GM4. Allow the pudding to sit while the oven heats up. 
  • Finally, bake for 25-30 minutes, until the top is golden brown. 

And that’s your Bread & Butter Pudding made, inspired by Maundy Thursday! This was actually my first time baking this recipe so I was super nervous as my mum is absolutely obsessed with this pudding. Thankfully, I got her approval straight away, which means I know I’ll certainly be making this more often.
