Easter Sunday, Honey Bunny Biscuits!

Happy Easter You Beauties!

As you know this Easter weekend I’m sharing with you all a blogpost daily. Today is Easter Sunday, which is one of the two most celebrated days within the Christian religion.

After Jesus’ death Friday, Jesus’ body was placed within a tomb. There was no time to prepear his body for a proper burial with spices and ointments according to Jewish customs. No work could be done on the Sabbath, so that task had to wait until Sunday. Early Sunday morning, Mary Magdalene and several other women went to the tomb with the spices they had prepared. When they arrived, they found the tomb had been opened already. When they went in, they did not find Jesus’ body, and they wondered what had happened. Suddenly, two angels in dazzling white clothes were there. The women were terrified, but the angels said to them, “Why do you look for the living among the dead? He is not here; He has risen! Easter is known as – the Resurrection of Jesus. 

So today I’ve decided to share with you my Honey Bunny Buscuits recipe, let’s get started; 

Ingredients For Biscuits: 

  • 75g of butter, softened 
  • 3 tablespoons of clear honey
  • 25g of caster sugar 
  • 125g of plain flour, plus extra for dusting 
  • 25g of cornflour 


How To Make: 

  • Firstly, gather all your ingredients & equipment together and preheat your oven to 180 oc / fan 160 oc / gas mark 4. 
  • Secondly, put 75g of softened butter, 3 tablespoons of honey and 25g of caster sugar into a large bowl and beat together until pale and creamy. 
  • Now beatened, add in the 125g of plain flour and 25g of cornflour and beat until the mixture forms a dough. 
  • Once the dough is formed, wrap the dough into cling film, flatten into a rectangle then chill for 30 minutes until firm. 
  • After the dough has chilled and become firm, lightly flour the work surface and roll out the dough to around 2-3cm thick. 
  • Using a 8cm plain cutter (or any size you’ve got) cut out 10 circles and place on a baking tray lined with baking paper.
  • As soon as all 10 are cut out, place the baking tray into the oven and bake for around 8-10 minutes; until golden brown around the edges. 
  • Once the Biscuits have been baked, allow to cool on the tray for around 5 minutes before transferring onto a wire rack to cool further. 


Ingredients Needed To Decorated: 

  • 3-4 tablespoons of apricot jam
  • Icing sugar, for dusting
  • Ready-To-Roll icing in the colours; blue, white, pink & orange 
  • Icing pens, specifically black


How To Decorate: 

  • Firstly, warm up the apricot jam with 1 tablespoon of water in a small pan, then press through a sieve into a bowl. Make sure you brush each biscuit evenly, very thinly and neatly on the cut out circles all over. 
  • Next, dust the surface with icing sugar and roll out the blue roll-out-icing very thinly. Cut out circles in the same sizes as the biscuits and press gently onto the jammy top of each biscuit. 
  • Now, roll out a third of the white icing and cute 12 circles with a plain 4cm biscuit cutter. Using the 8cm cutter (the bigger cutter you have), trim a little off the bass of 6 discs so that the curve matches the biscuit shape to form the bunny faces. 
  • Once you’ve done the above, roll out the rest of the white roll-out icing and cut out 6 x 4cm circles. Cut a 1.5cm – wide strip from either side of each circle to form a pair of ears. Place each around biscuit. 
  • Roll out the pink icing and cut out 4 x 2 cm circles and cute a 1.5cm wide strip from either side of eCh circle to form the inside of the rabbits ears. Place these just inside the initial white ears. 
  • Using the orange roll-out icing, roll into tiny balls and use as a little nose for the bunnies and place in the middle of the face. 
  • With the black icing pen (or whatever colour you’ve chosen) above the nose create two little eyes for the bunny and next to the nose draw three whiskers either side. 

And that’s it, that’s your cute little Easter Bunnies made and ready to bounce into your stomach!
